clean and soak rice for 30 minutes drain excess water and keep it aside
heat ghee in a vessel, ads bay leaf and whole spices roast until aromatic
add cashew nuts and fry until golden brown
add onions and stir fry until tender
add ginger garlic paste and saute until raw Aroma goes away
add chopped vegetables and curry leaves. saute for a minute
add coconut milk, coriander leaves and rice mix well
add salt and garam masala, mix and bring to boil
cover and cook on low heat for 15 minutes or until done
open lid fluff rice. serve with raita and curry
